Põhjala Laager

Lager 4.7% vol

A soft and malty red lager beer.

Treeninglaager

Hypotonic non-alcoholic lager 0.5% vol

A hypotonic alcohol-free beer, which helps to restore the loss of fluid and minerals. Brewed in collaboration with the Track & Field athlete Rasmus Mägi.

Taste: A delightful balance of malty sweetness and refreshing minerality, followed by a finishing kick of bitterness that lingers pleasantly.

Virmalised

IPA 6.5% vol

A powerful and hoppy IPA that uses a blend of American hops, giving the beer a fresh citrus and grapefruit punch. Contains barley malt.

Taste: Initially pink grapefruit juice will wash over your tongue, with a zing of lively carbonation that follows you all the way down. Lime zest and even a hint of peppercorn can be found if left on the tongue, before the massive mango kick knocks through your teeth.

Appearance: Deep orange with a crisp white head.

Nose: The first flavour to jump out at you and pull you in is the fresh flavour of ripe mango – transforming into a candied grapefruit zest. Coming in just moments later is the seductive smell of sweet orange juice in the morning.

NE IPA 5.5% vol

An intergalactic IPA brewed with huge amounts of Citra and Mosaic.

Taste: Sweet hops dominate, with a light malt backbone underneath. Tropical fruits and fresh citrus make up the bulk of this nectar like beer, with juicy notes and a low bitterness clearing the way for another glass.

Uus Maailm

San Diego Session IPA 4.7% vol

A hop-forward California-inspired session beer. Brewed with oat flakes for an extra silky mouthfeel. Hopped and dry hopped with a blend of New World hops (Galaxy and Mosaic). Contains wheat and barley malts and unmalted oats.

Taste: Dry and clean, this tastes as it smells – joining the fruity nose is a lemon and lime kick, with just enough bitterness to balance it out.

Session IPA 3.8% vol

A hazy DDH session IPA brewed with juicy Citra and Mosaic hops.

Taste: Sweet biscuity malts mix with a pillowy soft oat malt body that gets layered with tropical fruits and tinned nectarines. A touch of fresh hoppy bitterness comes in at the end, balancing out the sweetness and making you crave another sip.

Taste: Overripe mango and melon mix with oat biscuits and fresh citrus. Hints of refreshing spruce resin and a pleasant tingle of carbonation join the aftertaste, with a final touch of freshly zested lemon.

Non-alcoholic Raspberry Berliner Weisse 0.5% vol

A rich and creamy non-alcoholic sour beer, brewed with raspberries.

Taste: Smooth, fresh oats mix with sweet lactose to give a full and creamy body balanced by a fresh raspberry taste. Gentle acidity comes through on the aftertaste with more raspberries following, letting this slide down easy as perfect accompaniment to a sunny day.

A citrus-forward gose brewed with Oranges, Coriander, Himalayan rock salt, and our house culture of lactobacillus.

Taste: Refreshing citrus sour notes come through mixed with hints of fresh rye fields, and balanced out by a sweet, jammy orange juiciness. Even more floral zest shines through as the glass warms.

Gluten Free Pale Ale 5% vol

A gluten free hazy pale ale brewed with juicy tropical new world hops. Contains less than 20mg of gluten per kg.

Taste: Sweet citrus fruits and deliciously overripe pineapple rolls around the tongue before being joined by fresh coconut and a pleasantly sweet and creamy oat mouthfeel, matched with a delicate tingling carbonation. Peach and bright stone fruits join in and a juicy, refreshing, passionfruit-like hop character lingers on the tongue.

Taste: Sweet caramel malts jump out first, with red berries and hints of smooth morning coffee following — a light nuttiness and toffee follows, with huge chocolate notes coming in, all washed down with a creamy vanilla finish.

Must Kuld

Porter 7.8% vol

A rich porter with smooth honey notes. Brewed with lactose for that extra silky texture. Enjoy on its own or as a dessert at the end of a decadent meal. Contains barley malt and lactose.

Taste: As with the aroma, chocolate will come through first and foremost – this time a creamy white chocolate. Balancing this is a suggestion of delicate coffee with a decadent hint of raspberry and blackcurrant.

Nose: The aroma of smooth milk chocolate will pour out of the bottle when opened, quickly followed by both honey and blackcurrant jam.

OG 20° ; FG 6° ; IBU 45

Öö

Imperial Baltic Porter 10.5% vol

An Imperial Baltic Porter as dark as the Estonian winter nights. Strong enough to keep you warm through the cold evenings.

Taste: A rich body comes through at first. Initially the espresso-like acidity is balanced by a sweet taste of caramelised toffee. As your glass warms up you should expect to taste redcurrant, mixed with a dark chocolate, washed down with a slight alcoholic warmth.

Appearance: Pitch black - as dark as the night sky, with an opaque brown head.

Nose: A clean burnt sugar dominates, immediately giving way to rich dark fruits - plums, raisin, and fresh cranberries. Eventually, a roasted smokiness emerges, like a distant bonfire on the horizon.

Malts: Pilsner Zero, Munich, Carafa II Special, Special B, Chocolate malt, Crystal 300, Demerara sugar

Hops: Magnum, Northern brewer

Translation: Night

OG 24.2° ; FG 6.2° ; IBU 60

Recipe:

Grist. We scale this grist bill in this proportion to hit a starting gravity of 25° Plato after boil, and boil aggressively to ensure rich caramelisation.

58.9% Pilsner zero (Viking)
17% Munich (light) (Viking)
8.5% Carafa type 2 special (Weyermann)
4.2% Special B (Dingemans)
4.2% Chocolate malt dark (Viking)
4.2% Cara 300 (Viking)
2.8% Cara pale (Viking)
A further 15% of the fermentables will come from a dark sugar added at the start of the boil.

We mash for approximately 60 minutes at 62°C, then rise to 72°C for 15 minutes, before finally mashing out at 78°C and starting the latter.

We would look to start the boil at approximately 24°, with a pH of 5.1

Over the 60 minute boil we bitter to approximately 60—70 IBU with Magnum, and add 0.64g/L of Northern Brewer at the end of the boil

We ferment Öö at cool temps of around 18°C with WLP090, San Diego Super yeast, which we use as our house strain. We expect this to finish at approximately 7° Plato

Following the main fermentation, we’ll crash this to –1°c and hold it there until it’s tasty, removing the yeast. It’s not uncommon for this to sit for several weeks at cold temperatures lagering!

Additional notes:

We use Viking malt from Finland for the majority of our base malts and they have a very British style.

US-05 is an adequate substitute for WLP090, and may be preferable if you cannot create a healthy yeast starter

We’re using protafloc and yeast nutrients, these can be added as appropriate during the boil
