In the Cellar Series, we unleash our passion for ever deeper layers of oily, velvety, liquid goodness.

We use a variety of bourbon, cognac, sherry, and tequila barrels to age our unusual creations and create unique tastes by blending several distinctly different beers aged in complementary casks.

A rich Imperial Porter brewed with toasted rye flakes, aged in Bourbon and American Rye Whiskey barrels.

Taste: Dried plums and hints of winter spices dominate, with a silky smooth lingering caramel aftertaste.

An epic Imperial Stout aged in Rum, Mezcal, and Scotch for 11 months, inspired by good times around a campfire with friends.

Taste: Sweet maple syrup mixes with rich oaky tannins and dark chocolate, coating the tongue before offering a spicy lingering taste of chewy liquorice.

A sweet Imperial Stout aged in a blend of Pedro Ximenez sherry and American Rye Whiskey barrels.

Taste: Sweet sherry and dark chocolate jumps onto the tongue with raisins and dried figs following as the glass warms. Cloves, ginger and pralines slide down with just a hint of fondant icing before finally smooth anise with vinous notes of cherry wine remains on the tongue until the next sip.

Taste: Sweet vanilla dusted hot cross buns come through immediately, reminding the open oven of your favourite bakers before mixing with lashings of toasted Italian meringue, hints of freshly toasted coconut, and warming winter spices. A thick, oily body with a smooth long lasting bitterness jumps out from a nearby lake of toasted coconut and sandalwood, leaving behind a trail of gently crystallised malty flavours mixing with vanilla biscuits.

Collab with De Struise Brouwers. A celebratory Imperial Stout, double barrel aged for two years in Pedro Ximenez sherry barrels and Heaven Hill bourbon casks.

Taste: Leather and tobacco join up with lightly burnt toast and a topping of raisin confit, before melting into sweet toffee and vanilla sauce. A thick and chewy oak character comes through with a healthy roasted coffee bitterness and intense malt character. A beer that allows for intense contemplation over how much you, the world, and the beer itself have seen.

Taste: Sweet sticky port wine comes through followed by a slight vanilla taste, reminiscent of toasted Juniper branches and stewed mulberries - lingering on the finish is a smooth taste of mineral rich birch syrup, as if poured over freshly made oat porridge served with a side of plum jam.

Rich sweet malt notes come through and are then balanced out by a distinctive smokiness from the barrels, before slowly fading into the classic elegant fruity notes of exotic Mezcal mixed with new world hops. A dry finish helps this slide down easy, perfect for either sipping on the trails or sharing with your resident cocktail guru as the night goes on.

An Imperial Brown Ale aged in ex Madeira wine and bourbon barrels.

Taste: Sweet wine soaked sultanas and chestnuts come through evoking warm winter nights then are joined by perfectly burnt toast, hints of exotic liquorice, and even a light mint character. Roasty, nutty malt characters lead with a supporting cast of dark sugars, sweet lactose, and smooth crystal malts and rich tannins come through from the wine with just a touch of alcohol. Bourbon brings warmth of the new world, whilst the old world is well represented by the ex wine in this intercontinental contemporary brown ale.

Taste: Smooth apple and light espresso notes lead followed by just a tang of crisp green apple skin acidity. Hints of wood smoke come in - like the last embers of a long-burnt smoke sauna — before fresh and vibrant red apples return. Gentle and warming calvados spirits round out the end, before leaving more of the chocolate apple notes promised in the aroma with a creamy, ice cream like finish.

11.5% Barrel Aged Imperial Buckwheat Porter


A peated buckwheat porter brewed with buckwheat honey and aged in both bourbon barrels, and Scotch whisky hogsheads from the Islands.

Taste: Sherry and red fruits mingle with the spiciness of buckwheat before giving way to a touch of earthy bitterness and gently lingering peated malts. Hints of burnt toffee comes back with more iodine and sea salt, all finishing on a pleasant chocolate oak character mixed with charred oak.

A mighty USA-hopped barley wine, aged in Armagnac and Oloroso sherry barrels.

Taste: Burnt toffee, caramelised figs, pecan nuts, with a hint of fruity, herbal hops. Sweet malts mingle elegantly with a rich sherry character, before being lifted up by a sweet and spicy flavour from Armagnac, eventually lending a slight anise character. Best enjoyed whilst watching a mediterranean sunset.

Taste: Sweet rum notes and chocolate roll across the tongue, with an assertive vanilla oak character. Hints of citrus hops join in, before a burst of red fruits and malt takes on the aftertaste.

12.3% Barrel Aged Imperial Gruit


A traditional ale, spiced with Estonian herbs, caraway and juniper berries, aged in bourbon barrels.

Taste: Rich sweet malty notes come through, before being dashed through with the somehow citrusy taste of juniper berries drying by a fireplace. Earthy spices then appear, including long forgotten herbal aromas that are strangely familiar, as if remembering a childhood hike through nature, or the wild, gnarly, primeval end of your grandmothers herb garden.

As the beer warms, even the bitterness starts coming through as a rounded, medicinal quality rather than aggressive hops.

Finally, the gentle carbonation lifts the creamy notes from the bourbon barrels, adding a delicate smoothness to the beer.

Wild West campfire breakfast inspired imperial stout, brewed with chilli, black currant, and coffee, aged in Bourbon barrels.

Taste: A heavy hit of soaked bourbon and burnt coffee is balanced by rich chocolate notes from the chilli, turning into a spicy leathery pipe tobacco finish. Blackcurrant sweetness comes in on the aftertaste, whilst the campfire smoke sizzles down into the last embers of the glass - perfect to welcome in a new day after a long hard ride.

A strong sour and salty wheat beer, brewed with selected botanicals and aged in gin barrels from Kyrö distillery.

Taste: Rich, sharp citrus-like sourness comes through, washed down by a mineral taste, reminiscent of tonic character. As you get further down the glass, a candied ginger and baked apple flavours come through, before building up to a final refreshing crescendo of juniper and spice.

A celebration of Rye in all its forms - brewed with 70% rye grain and aged in american rye whiskey barrels.

Taste: With a mouthfeel like chewing on a dark and roasted black rye bread, this manages to be both richly sweet enough to be nourishing, whilst being balanced by the peppery spice of the rye malts. With an underlying spicy molasses like body and a touch of blackcurrant like fruitiness, the barrel ageing gives an additional layer of complexity - wrapping up all the other flavours in yet more spice and smooth charred oak.

Nose: Rich dark fruits - figs, prunes, and raisins - and strong dark chocolate come through, with hints of winter spices such as cinnamon, cloves, nutmeg, and dark rye bread. Coming later are aromas of Kali, vanilla, some tobacco and huge rye - a bold yet inviting aroma that demands to be noticed.

Our anniversary barley wine, aged for nearly 12 months in Port and Cognac barrels.

Taste: Rich, sweet malts, with dates, raisins, wine-soaked figs, dried plums and ginger biscuits. Cognac and ludicrously complex grape flavours come into play very quickly, balancing out all this sweetness with intricately layered tannins from the oak coming into play. After this assault on the sense, toffee and caramelised sugar come in - like a visit to Grandma’s kitchen, with the added bonus of some alcohol to warm you on a cold spring night.

A multi-layered stout aged in rum barrels from the island of Martinique for over 6 months. Named after the ancient Estonian war cry.

Taste: Silky smooth, sticky but not sweet. Taara Avita! starts off with the taste of pure sugarcane rum, and oaky vanilla. As the beer warms up, the flavour profile opens up too. Salty tastes from the peated malt shine through whilst the taste of fresh ginger biscuits lingers in the aftertaste.

9% Pinot Noir Barrel Aged Rye Porter


Collaboration between Põhjala and Lervig. Released only in bottles. A complex rye porter, aged in Pinot Noir barrels.

Taste: The first taste explodes on the tongue with plums and redcurrants. These linger on the back of the tongue whilst also being slowly replaced by darker fruits - the tartness of blackcurrants mingling with sharp blackberries. Sweet dark sugar is present, but only in a supporting role, rather than making the beer cloying. Finally, when the glass is empty, you are left with the rich aftertaste - a reminder of the velvety, elegant body and refined flavours of the beer and pinot noir oak in symbiosis.
