In Cellar Series we unleash our passion for deep layers of oily velvety liquid goodness.

We use a variety of cognac, bourbon, tequila, sherry etc barrels and just lately we have found a new direction of creating unique tastes by blending several different beers aged in different barrels.

Cowboy Breakfast

12.5% Bourbon barrel aged imperial stout

Wild West campfire breakfast inspired imperial stout, brewed with chilli, black currant, and coffee, aged in Bourbon barrels

Taste: A heavy hit of soaked bourbon and burnt coffee is balanced by rich chocolate notes from the chilli, turning into a spicy leathery pipe tobacco finish. Blackcurrant sweetness comes in on the aftertaste, whilst the campfire smoke sizzles down into the last embers of the glass - perfect to welcome in a new day after a long hard ride.

Appearance: Pitch black with a burnt crema head.

Nose: Smooth porridge and maple syrup on the nose, with hints of blackcurrants and smoke gently unfolding from the glass.

Imperial Ginie

10.8% Gin barrel aged imperial gose

A strong sour and salty wheat beer, brewed with selected botanicals and aged in gin barrels from Kyrö distillery.

Taste: Rich, sharp citrus-like sourness comes through, washed down by a mineral taste, reminiscent of tonic character. As you get further down the glass, a candied ginger and baked apple flavours come through, before building up to a final refreshing crescendo of juniper and spice.

Pime Öö Islay BA

13.6% Barrel Aged Imperial Stout

An Imperial Stout, aged in Scotch Whisky barrels from Islay.

Taste: Immediately warming malty notes, with tangy red berries and sweet heather honey following - all wrapped up in a package of intense smokiness. Best paired with smoked game meats, thunderstorms, and waves crashing against a rocky beach.

Nose: Campfire roasted malt, peat smoke mixed with iodine, whispers of alcohol - almost challenging you to venture further.

12.9% Barrel aged rye wine

A celebration of Rye in all its forms - brewed with 70% rye grain and aged in american rye whiskey barrels.

Taste: With a mouthfeel like chewing on a dark and roasted black rye bread, this manages to be both richly sweet enough to be nourishing, whilst being balanced by the peppery spice of the rye malts. With an underlying spicy molasses like body and a touch of blackcurrant like fruitiness, the barrel ageing gives an additional layer of complexity - wrapping up all the other flavours in yet more spice and smooth charred oak.

Appearance: Deep, dark chestnut brown with a slight red hue and a beige head.

Nose: Rich dark fruits - figs, prunes, and raisins - and strong dark chocolate come through, with hints of winter spices such as cinnamon, cloves, nutmeg, and dark rye bread. Coming later are aromas of Kali, vanilla, some tobacco and huge rye - a bold yet inviting aroma that demands to be noticed.

Taanilinn

14% Cognac Barrel Aged Spiced Imperial Stout

Põhjala and To Øl created this beer together to honour the old Danish heritage of Tallinn. Deep complex oatmeal stout aged for months on cognac barrels. Spiced with all the best from the liquors of Estonia.

Taste: Rich red fruits dominate the initial taste, with a powerful cherry and baked plum coming through. The acidity of a red wine is balanced with gentle oakiness and the taste of cognac, before being merged with that of a deep dark coffee and milk chocolate.

11.1% Imperial Porter

A unique collab between two Porter homelands – Brew By Numbers from London and Põhjala from Tallinn – aged in Moscatel Roxo barrels.

Taste: Soft creamy red fruits - sweet and juicy strawberries coated in marzipan, stewed plums, and assertive cacao. These are followed by a dessert wine finish reminiscent of a fine Darjeeling tea.

Mel Gibson

12.2% Scotch Whisky Barrel Aged Scottish Ale

Scottish Ale aged for months in Highland and Island Scotch Whisky barrels.

Taste: Immediately the tastes of the rolling Glens of the Scottish Highlands will come to mind — rich warming grains, sweet honey, pecans and a hint of alcohol. Right after will come the lapping waves on a rain-battered North sea island — the gentle smoke of a peat campfire, the smell of the sea on a cold night, exotic liquorice, and a cracked black pepper spiciness to finish up.

Nose: Fresh sea salt, burnt caramel, toffee, and fig marmalade, followed by a rich honey on toast aroma. Continue to dig deeper and liquorice, plums, and raisins follow, with just a hint of peat smoke.

Porridge Bullet

11.9% Barrel Aged Multigrain Breakfast Ale

A big and bold dark ale, brewed with four types of grain, aged in selected barrels, and carefully blended to perfection.

Taste: Full bodied from the beginning, this very quickly slides across the tongue, lacing it with more of the same, followed by coffee, blackcurrant, assertive black bread, and a creamy sweetness from the lactose. Enjoy for breakfast served with your finest cigar.

11.5% Cognac Barrel Aged Imperial Baltic Porter

A special version of the Öö, aged for months in Cognac barrels.

Taste: A silky smooth texture of dark malts, red fruits, cognac, liquorice, and honey. Hints of molasses mix with those of rich dark chocolate, all balanced with elegant tannins cleansing the palate.

Nose: Dark fruits, plums, raisins, cranberries, and grapes - a rich forest fruit jamminess hits the nose first with some espresso notes and dark sugar. Cherries, cognac, tannins and hints of spice linger in the background.

Mutant Disco TQ

7.5% Tequila Barrel Aged White IPA

A very special version of the Mutant Disco White IPA, aged for months in Tequila barrels.

Taste: Vanilla and coconut rushes onto your tongue at first taste, coming from the barrels. But then, an overload of fruit basket overtakes this: pineapple, lemon, lime, peach, lychee, and even a hint of melon. Amongst all of this a pleasing bitterness ties it together, with a freshness from the carbonation lifting the beer up and leaving you longing for another sip.

Appearance: Brilliantly clear light orange with a fluffy white head.

Nose: The nose is entirely dominated by a beautiful agave, clearly showcasing the tequila. Hints of lemon and fresh peaches linger, with just a hint of alcohol - again, unmistakably coming from the tequila.

13.9% Pedro Ximenez Sherry Barrel Aged Imperial Stout

Sherry barrel aged limited version of Pime Öö.

Taste: Big and bold, this immediately makes the Pedro Ximenez felt. Luxuriously sweet, with a heavy presence of cherry and chocolate. The raisin character from the aroma comes through again, sliding down the tongue smoothly. Best enjoyed when sipped by a fireplace.

Nose: The smell of dates, raisins, cranberries, and above all, sherry overwhelm the room. Blackcurrant jam, smooth chocolate, and a light toasted oak character come through later, whilst sweet malts and a hint of alcohol closes the aroma.

Our anniversary barley wine, aged for 6 months in bourbon barrels.

Taste: Again, an avalanche of vanilla comes through, supported by a light orange marmalade. Tart cranberries, ginger snchapps, and toasted bread quickly come through, supported by a hint of alcohol and rich oak.

Odravein Port & Cognac BA

14% Barrel Aged Barley Wine

Our anniversary barley wine, aged for nearly 12 months in Port and Cognac barrels.

Taste: Rich, sweet malts, with dates, raisins, wine-soaked figs, dried plums and ginger biscuits. Cognac and ludicrously complex grape flavours come into play very quickly, balancing out all this sweetness with intricately layered tannins from the oak coming into play. After this assault on the sense, toffee and caramelised sugar come in - like a visit to Grandma’s kitchen, with the added bonus of some alcohol to warm you on a cold spring night.

Nose: Toffee and christmas cake spices come through first, with a generous dose of cognac warmth rising into the aroma. Dark fruits and rich madeira wine notes follow, enticing you to explore further.

Taara Avita!

10.8% Rum Barrel Aged Stout

A multi-layered stout aged in rum barrels from the island of Martinique for over 6 months. Named after the ancient Estonian war cry.

Taste: Silky smooth, sticky but not sweet. Taara Avita! starts off with the taste of pure sugarcane rum, and oaky vanilla. As the beer warms up, the flavour profile opens up too. Salty tastes from the peated malt shine through whilst the taste of fresh ginger biscuits lingers in the aftertaste.

Nose: Honey and dark sugar dominate the nose, leading into an exotic rum aroma - a light salted, tarry note comes in to finish, balancing the sweetness.

11.9% Pedro Ximenez Sherry Barrel Aged White Stout

Sherry barrel aged limited version of Valge Öö.

Taste: Sweet dates and rich treacle mingle with coffee and raisins. A smoky, earthiness intrudes, followed by chilli spice, before being washed over by dark chocolate and yet more plums. Finally, you are left with the decadent aftertaste of sherry-soaked figs.

Nose: Dark fruits, plums, massively rich chocolate, nuts, and a French espresso come through, followed by an unexpected aroma of chilli pepper, warming the aroma and enticing you in.

Odensholm BA

9% Pinot Noir Barrel Aged Rye Porter

Collaboration between Põhjala and Lervig. Released only in bottles. A complex rye porter, aged in Pinot Noir barrels.

Taste: The first taste explodes on the tongue with plums and redcurrants. These linger on the back of the tongue whilst also being slowly replaced by darker fruits - the tartness of blackcurrants mingling with sharp blackberries. Sweet dark sugar is present, but only in a supporting role, rather than making the beer cloying. Finally, when the glass is empty, you are left with the rich aftertaste - a reminder of the velvety, elegant body and refined flavours of the beer and pinot noir oak in symbiosis.

Nose: Rich red wine - sweet blackcurrant jam intermingles with pipe tobacco and sour black cherries. Some vanilla peeks out, rounding the edges and leaving an inviting aroma of red berries.
